Baked Cream Pasta For Breakfast

Happy Thursday. The week flies back, one day closer to more freedom. What's the most excited thing to do ?! 🥳 I understand you might all be having breakfast, but I needed to share this baked cream pasta that I made yesterday. It is actually my Holy Grail ingredient in recipes - it changes the game in both sweet and savory, and it blends into sauces very nicely. Pure texture targets. Don't knock it until you try it. The other - ground nutmeg - yes the spice you put in gingerbread in my opinion is essential in creamy sauces. Only a few pinches are needed and they add great depth of flavor all the time. And no, it won't make the pasta taste like Christmas 🎄 Calm the kids. Enjoy this - I ate it for lunch and dinner yesterday and plan to do the same today. Noodle Heaven💃🏼
the ingredients
1 tablespoon of extra virgin olive oil
1 large shallot (sliced)
250g mushrooms (sliced)
1 red pepper (thinly sliced)
3 garlic cloves (crushed)
115 g dried tomatoes
1 teaspoon of Italian seasoning
500 grams of your choice of dried noodles
1/4 teaspoon salt
1 slice of bread (dipped in breadcrumbs)
420 ml of oat milk
2 tablespoons of soy sauce
15 grams nutritional yeast
1/4 teaspoon ground nutmeg
200 grams of silky tofu
100g dairy-free grated cheese plus another handful on top
1. Start by preheating the oven to 180 ° C, and also boil a large pot of water over a medium heat.
2. Heat a separate large frying pan over medium heat then add the oil and the shallots slices. Cook for a few minutes, stirring, to make sure the leeks do not burn before adding the mushroom and pepper slices.
3. Add the pasta to the pot of boiling water and cook according to the instructions.
4. Meanwhile, add the dried tomatoes, Italian spices and salt to the skillet along with the mushrooms and pepper and mix.
5. Then in a blender, add the sauce ingredients such as oat milk, soy sauce, nutritional yeast, ground nutmeg and silky tofu. Even a smooth blend.
6. Once it's smooth, pour the sauce into the pan with the mushrooms and add the grated cheese as well.
